There are many ways of preparing the tea, but here is my preferred method: Put the water into a pot & bring it to a boil.Rinse needles in fresh cold water.Chop pine needles finely. (1 tablespoon per cup) Add them to the boiling water in the pot. Reduce heat to low, cover to retain volatile oils & simmer tea for 20 minutes. Don't heat any longer as the vitamin C is heat sensitive.Remove from the heat & steep covered for another 20 minutes or overnight. The tea will gain a red tinge.For more flavor, add lemon juice, mint leaves, lemon balm, honey or other sweetener.
